Builders Log and Barrel Rolls

Seemingly unconnected, but...

I thought it would be cool to set up a camera on a tripod, and take photos automatically of my build at intervals, say 15 or 20 minutes. Then discard the pictures that I don't want/ need, and print the appropriate ones.

The GoPro 12 can do this. PLUS be mounted in my aircraft with a constant horizon feature for cool barrel roll pictures.

Anyone have a better, easier, or cheaper solution??
